anyhoo, today i was really bored so i decided to make some gingerbread cookies! they turned out really nice, but they didnt have as much as an "edge" as i like them to have so next time i will add some more ginger;)
in case you are feeling all creative and chef-like like i was today, i will post the recipe below:
ingredients:
130g unsalted butter 100g brown sugar 4tbsp golden syrup
330g plain flour 1tsp bicarb of soda 3-5 tsps ground ginger
preheat the oven to 170 degrees celcius
line trays with baking parchament or grease with butter
melt the butter (in chunks), the sugar and the syrup in a saucepan, stirring occasionally.
when it is all melted thoroughly, take it off the heat.
now, sieve the flour, the bicarb of soda and the ground ginger into a large bowl
when the syrup mixture has cooled to a reasonable level, pour this into the bowl
carefully stir the wet and dry ingredients together until it starts to form a dough
after you have rolled it into a ball (VERY GREASY), turn it out onto a lightly floured surface.
roll it to 5mm thick, and cut out in your desired shapes.
bake for 9-10 minutes!
when they have been baking for 9-10 mins, take the cookies out of the oven. at this point, they will be really soggy. this is how they are supposed to be - dont worry though, they will harden up later on! leave them to cool and harden on a wire rack, and when they are cool feel free to decorate them however you please!
