Baffday

It was my birthday three days ago. Just thought I'd share that with you.
Here are some of my ace-est presents -

Oh but what really really really really really made my day was when this happened:


I went bowling with the family on that day (26th August) and I came 2nd out of 4th lol.
Apparently I have the technique of a professional I just don't know where to stand. Dad refused to tell me where to stand in case I beat him. Which I didn't. But I wanted to.
Then I went to Damons and ate loads and got a free chocolate cake. Which nobody ate.
Just about sums up my birthday!

Then the day after, I made a cheesecake.

The recipe is here:

Lemon cheesecake

Base:
10 digestive biscuits (I used about 14 because my family like the biscuity bit)
75g butter, melted
1 tbsp clear honey
For the filling:
700g mascarpone cheese
2 lemons, juice and zest
300g caster sugar
4 tbsp icing sugar

Method

  1. brush the bottom of a 9inch cake tin with some of the melted butter and place a round of greaseproof paper in the base. (I didn't use the greaseproof paper and it turned out fine though)
  2. crush the biscuits and tip them into a bowl, add the melted butter and honey and stir until well combined 
  3. tip the mixture into the bottom of the cake tin. using the back of a spoon, gently push the crumbs from the centre outward, until smooth and level. Chill in the fridge for 30 mins. (the longer you leave it the possible btw)
  4. mix the cheese, lemon juice and zest and caster sugar together in a bowl until well combined. (step 'sieto' is after you mix it once and step 'ocho' is what it should look like at the end'
  5. spoon the mixture into the tin on top of the base and chill in the fridge for at least 2 hours. (I left it overnight actually)
